If you want to get a glimpse of Old Marbella, the movers and the shakers who matter in this town, wander into Santiago's around lunchtime, or any time of the day or night. It is always packed, on the outside terrace facing the ocean, in the air-conditioned restaurant, at the bar where the olfactory pleasures of finos poured into chilled glasses and tapas heaped onto generous plates hint at the gastronomic pleasures to come.
Nobody refers to Santiago Dominguez's eponymous establishment as anything other than Santiago. "Restaurante" is superfluous, it is so well known. Where else will you find the same restaurant, in the same spot, owned by the same proprietor for over 50 years? Santiago is a legend (restaurant and owner), with the awards, clients and marvellous culinary anecdotes that go with it, a tribute to the Mediterranean and the fresh ingredients sourced from the best national and international suppliers.
Avant garde cuisine, classic recipes, the freshest produce prepared in a simple or sophisticated way, the menu caters to all palettes. Try Monkfish with glazed vegetables on a bed of sunflower seeds in Romesco dressing: hake cooked in cider with tapioca pearls; spiny lobster casserole or the famous gigantic king prawns from Sanlucar and oysters from Arcade, that need nothing more than a drizzle of olive oil or touch of lemon. Sea bass baked in salt is a permanent favourite. Though predominantly a fish and seafood restaurant, Santiago is also famed for its baked suckling pig and charcoal grilled steak.
While you are there, look at the bodega. Larger than some apartments, it houses 700 varieties, ie. There are thousands of wines from different regions of Spain and other countries. Some rare examples date back to 1800, but these are housed in the wine museum known as Salon Don Camilo, named after an illustrious personality who ate – and drank – here daily.
